GARDEN TO TABLE

- Back to basics Thai style.

A small farm nestled in the mountains of northern Thailand run by Pinan Jim and his wife. Pinan Jim was a buddhist monk for 16 years before he returned to his village to practice traditional farming and become the towns medicine man. Here the concept of 'garden to table' is a beautiful reality. Coffee is grown, harvested, dried, de-husked and roasted before it is drunk. Vegetables are planted from dried local seeds, watered and harvested before they're cooked. It's simple rustic living at it's best. The days begin at 5 am with hot tea over a rocket stove (traditional wood fire stove), cutting grass for Buffolina the resident Buffalo, watering local greens and sitting down to a family meal of communal dishes and purple sticky rice.
